๐จ Caution: Never eat a plant you cannot identify 100%!
Poisonous plants can be deadly. This guide is only for experienced gatherers.
1. Safety Rules for Wild Plants
- 100% Identification: Doubt = Discard. Take a photo guide.
- Avoid contaminated areas: Road sides (exhaust fumes), industrial areas, toxic soils
- Never gather all: Max. 1/3 of a plant group so it can regrow
- Eat raw? Many wild plants must be cooked or blanched
- Allergy test: Try small amount, wait 15 minutes
2. Edible Wild Plants (Germany)

| Chickweed | Leaves, stems | Year-round | Mild, salad-like. Grows everywhere. |
| Ground elder | Leaves, young stems | March-June | Like parsley. Don't confuse with hemlock! |
| Plants from near the meadow | Leaves | Spring | Only young shoots. Bitter substances in older plants. |
| Plantain | Young leaves | March-Oct | Very nutritious. Raw like salad, cooked like spinach. |
| White clover / Red clover | Flowers, leaves | May-Sep | Flowers edible raw, leaves cooked. Don't confuse with garden clover! |
| Dead nettle | Leaves, flowers | March-Oct | Not stinging! Mild-nutty taste. |
| Wood sorrel | Leaves | Apr-Aug | Sour, vitamin-rich. Use like sauerkraut. |
| Yarrow | Leaves | May-Oct | Bitter, aromatic. Tea or as spice. |
| Chestnuts (Sweet chestnut) | Fruits | Sep-Oct | NEVER Horse chestnuts! Sweet chestnuts = sweetish, edible raw. |
| Acorns (Oak) | Fruits | Sep-Nov | Roasted or flour. Wash out bitter substances! |
| Hazelnuts, Walnuts | Fruits | Sep-Oct | Nutrient bomb. Store dry. |
| Mushrooms | Fruit bodies | Sep-Nov | ONLY with 100% certainty! Porcini, Chanterelle, Oyster mushroom are safe. |
3. Poisonous Look-alikes (Caution!)

| Ground elder | Water hemlock | Hemlock has smelly root, pinnate leaves |
| Plantain | Foxglove (Digitalis) | Foxglove has rosette leaves, tall flower spike |
| Clover | Crown vetch (poisonous) | Crown vetch has finer leaves, yellow flowers |
| Sweet chestnut | Horse chestnut | Sweet chestnut = pointed, Horse chestnut = round, shiny |
| Wild garlic | Autumn crocus, Lily of the valley | Wild garlic smells like garlic (crush!) |
4. Preparation Tips
- Blanching: Nettles, Ground elder, Dandelion briefly in boiling water = milder
- Soup: Wild herbs with potatoes, onions, broth puree
- Salad: Young leaves raw with oil/vinegar
- Tea: Nettle (blood cleansing), Yarrow (digestion), Linden flowers
- Flour: Acorns/Acorn flour as grain substitute (wash out bitter substances first)
5. Checklist: Wild Plant Gathering
- โ Identification book/app with photos (offline!)
- โ Gathering basket/cloth (no plastic โ sweats)
- โ Gloves (nettles, thorns)
- โ Small knife (clean, cut)
- โ Map with known gathering areas
- โ Never gather more than 1/3 of a group
- โ First test small amount (allergy check)
